Full Recipe:          NAVRATNA KORMA

Cook Time: 30 mins

Cuisine: Indian- Punjabi

Nutritional value: This richest Korma recipe is much favorite in Indian restaurants. Navratna Korma, contains nutritious veggies and fruits along creaminess of fresh cream and milk and white gravy made of healthy Dryfruits, makes this recipe super creamy, delicious and healthy too.

Now let me tell you it's Nutritional content-

Calories- 275 kCal.            Carbs- 21.8 g

Protein- 5.3 g                     Fat- 20.1 g

Fibre- 4.2 g                         Calcium- 6.4 g

Iron- 8.2 g                          Magnesium- 12.7 g



INGREDIENTS

For White Gravy-

Cashew- 20 (soak in milk)

Almonds- 10 (soak in milk)

Poppy seeds- 1 1/2 tsp (soak in milk)

Onion- 3 (chopped)

Ginger- 1" piece

Garlic- 6 cloves

Green chilli- 2

Curd- 1 cup


For Korma-

Oil- 1 tbsp

Ghee- 2 tbsp

Bayleaf- 1

Cardamom- 2 pods

Cinnamon- 1" piece

Cumin powder- 2 tsp

Coriander powder- 1 tsp

Garam masala- 2 tsp

White Pepper powder- 1 tsp

Salt- 1 tsp

Veggies (Peas, Beans, Carrot, Sweet corn)- 1/2 cup (chopped and parboiled)

Fruits (Apple, Kiwi, Pineapple, Pomegranate)- 3/4 cup (chopped)

Water- 1/2 cup

Milk and Cream- 3/4 cup

Coriander- 2-3 tbsp (finely chopped)


STEP BY STEP RECIPE

For White Gravy-

1. In a mixer grinder, add soaked Cashew, Almonds and Poppy seeds. Also add Onion, Ginger, Garlic and Chilli. Grind into smooth paste.

2. Now add curd and again blend into smooth paste.

For Korma-

1. In a pan, heat oil and ghee. Add Bayleaf Cinnamon Cardamom. Let Cardamom get bloated.

2. Add white paste, saute until thick. Now add spices (cumin powder, coriander powder, Garam masala, white Pepper powder, Salt). Mix and cook until oil separates.

3. Now add water and balance consistency. Again cook until reduces to gravy consistency.

4. Now add fruits and vegetables, mix properly.

5. Now add milk and cream, and cook for 5 mins. Finally add Coriander.

6. Serve this creamy NAVRATNA KORMA with Tandoori Roti..
