Full Recipe:            METHI MALAI MATAR

Cook Time: 30 mins

Servings: 4

Cuisine: North Indian

Nutritional value: North Indian white gravy recipe "Methi Malai Matar", mildly spiced & creamier curry with winter ingredients- fenugreek, peas,and richness of cream/ malai. Methi/ fenugreek here having antioxidants yet lower in calories. Also good source of Vit- K, that helps bone metabolism.

Green peas/ matar, having fibrous protein good for wt. loss. And malai/ cream, with richness of calcium, promotes strong bones but low in carbs.

So all together this curry gives you benefits of winter foods with richness in taste. 

Now let me tell you it's Nutritional content-

Calories- 290 kCal.             Carbs- 13 g

Protein-  7 g                        Fat-  23.8 g

Fibre- 5 g                            Sodium- 31.6 mg 

Calcium- 190 mg                 Iron- 2.5 mg

INGREDIENTS

For White gravy-

Oil- 2 tsp

Garlic- 4-5 cloves 

Ginger- 1" piece

Chilli- 2 (slitted)

Onion- 1 (sliced) 

Cashew- Peanuts- 1/4 cup (soaked in milk)


For Curry-

Oil- 2 tsp

Ghee- 2 tsp

Cumin- 1 tsp

Methi- 1 cup

Water- 1 cup

Milk- 1/4 cup

Cream- 1/4 cup

 Peas- 2 cups (boiled)

Sugar- 1/2 tsp

Salt- 1/2 tsp

Garam masala- 1/4 tsp

Pav bhaji- 1/2 tsp


STEP BY STEP RECIPE

1. In a pan, heat oil.

2. Add Garlic, Ginger, Chilli and Onion. Saute properly until onion shrinks and gets aromatic.

3. Let cool and add to grinder.

4. Also add soaked Cashew- Peanuts and blend into smooth paste.

5. In an another kadhai, heat oil and ghee.

6. Add Cumin and saute till tuns aromatic.

7. Now add the paste/ gravy blended and cook until oil separates.

8. Then add methi and saute for 2-3 mins and let methi shrink slightly.

9. Now balance curry consistency by adding water little by little and continous mixing.

10. Now add boiled peas, sugar and salt. Mix well.

11. At last add spiciness by adding Garam masala and Pav bhaji masala and cook till gets creamier.

12. Serve this METHI MALAI MATAR Curry With Naan, Roti and Salad.
